We would want to use the table full height. Do you have to remove extending leg parts to fold up?

All four legs are height adjustable. You can lock legs to your desired height by rotating their lower half until locked. The table can fold down to small pack and comes with a heavy duty nylon bag for carrying around.

Is assembling required for the legs? 

No - they just unfold from the base. Very easy.

Does this table completely “flatten out” when set up? No ridges or cracks in the top. I am interested in it for jigsaw puzzles.
